One of the most popular street foods in all of Mexico is Elotes Esquites. It starts with a corn on the cob. The husk and silk are removed before ramming a wooden stick into the wide end of the cob. That's the handle. It's then slathered with mayonnaise, dunked in a tin of grated cheese, squirted with lime juice and sprinkled with chili peppers. All for 12 pesos - about $1. |
