The Chaiwallah mixes milk, a bit of water, sugar, cardamom, freshly grated ginger, a pinch of crushed black peppercorns, and, of course, black tea leaves. He brings it all to a boil, strains it and serves it to you, piping hot, in a glass.

It gives you a kick-start in the morning and, in fact, any time of day.
