I'm not a big fan of tripe. I'll eat it once in a while but I don't seek it out. JoJo loves the stuff, as do most Mexicans. They call their special tripe dish, Mondongo and it's supposed to be an excellent hangover remedy. (What's wrong with aspirin?) This series of photos shows only the labor intensive cleaning of the tripe. There are 3 different kinds of cow stomach which must be cleaned with soap and a scrub brush, then soaked in lime juice and salt, then finally vinegar and salt. Now you're ready to cook! The ingredients for the final dish are: garlic, onion, bay leaves, guajillo chile, chick peas, potatoes and fresh herbs. |
