For one last time JoJo gets together with the best cook in Tlacotalpan to put together a local recipe for fish soup. We started in the port city of Alvarado, about halfway between Tlacotalpan and Puerto Veracruz. Here you can get sea fish. In Tlacotalpan, only river catch is readily available. It's once again similar to a paella but this one contains shrimp, conch, squid, crab meat and oysters. A red snapper is fried separately and added at the end, placed on top. |
