I grew up in New York City in the 1950s. The only markets I knew were supermarkets and there were no disembodied pig heads floating above the meat department - I would have remembered that.

This is not the case with most markets in the world - certainly not the one here. Campechanos are not squeamish about where their food comes from.

I've just finished reading Michael Pollan's book, The Omnivore's Dilemma, which I would recommend to anyone who eats.
